Hedgehog Biscuits ~ Recipe Below Video

These are absolutely adorable and really simple to make. We had so much fun making them with my girls. Keep the recipe in your piggy bank of ideas for when the little ones are bored!

We have tried two different types of dough for this recipe (vanilla biscuit dough and shortbread) and I think that shortbread works best.

Ingredients:
* 200g plain flour
* 50g caster sugar
* 125g unsalted butter (cut into small cubes)
* 200g good quality milk or dark chocolate
* Roasted hazelnuts (chopped)

Method:

Preheat the oven to 170C. Sift flour in a bowl, add sugar and mix well. Next add butter and rub it with flour and sugar using your fingertips until the mixture looks “sandy”. Next take a handful of dough and squeeze it in the palm of your hand until the ball is formed and shape a little snout on one side. Note that the dough is crumbly, but keep pressing and it will come together.
Once you have used all your dough, put the biscuits in the oven for about 25-30 minutes or until golden. Let the biscuits cool completely before decorating them.
Once they are cool, melt the chocolate over a bain-marie, then dip the side of the biscuit that will be the back of the hedgehog into the chocolate and immediately sprinkle with chopped nuts. Then make a face of the hedgehog using a tiny brush or a cocktail stick - two dots for eyes and one for a nose.

Place the biscuits in the fridge for a few minutes to allow the chocolate to set.
